Fennel and Orange Salad

This delicious fennel and orange salad recipe is light, refreshing, nutritious and super-easy to make.

Orange is low in calories, high in vitamin C, phyto-chemical antioxidants, soluble and insoluble dietary fibe

Fennel is rich in fiber, potassium, folate, vitamin C, vitamin B6 and phytonutrient content in this delicious salad recipe.

Fiber has shown to have choleterol lowering properties, thereby decreasing the risk of heart disease.

Ingredients:

1 fennel bulb – finely chopped

½ cup of mint – coarsely chopped

1 orange – chopped into 1cm chunks

 

Dressing:

3 tablespoons of extra virgin olive oil

2 teaspoons of white wine vinegar

2 tablespoons orange juice

Method:

Simply combine dressing ingredients in a bowl, and whisk. Place finely sliced fennel, mint and orange pieces in bowl. Add dressing then enjoy!
