How good are Anzac Biscuits? They’re perfect all year round, but it isn’t until this time of year we remember how much we enjoy them. These healthy alternatives to the original recipe taste just as good – with half the guilt! Perfect lunchbox filler or with a cuppa on the couch.
INGREDIENTS (makes 8 – 12)
1 cup of rolled oats
1/2 cup shredded coconut
3/4 cup almond or quinoa meal
1/4 cup maple syrup
3 tbsp. coconut oil, melted
1 tsp. vanilla extract
Preheat oven to 170C.
Line 2 baking trays with baking paper.
Combine dry ingredients in a bowl. Add all wet ingredients and mix together.
Roll mixture into small balls and place on baking trays spaced evenly apart.
Flatten each ball with a fork.
Bake in the oven for 10-15 minutes or until golden brown.
Allow to cool on trays, before transferring to a wire rack. Store in an airtight container.
