Here is a delicious meal from our Reshape Your Life Recipe book. It’s a great meal for lunch or dinner, especially as the weather starts getting warmer here in Australia. Full of omega 3, protein and iron here is our recipe for some delicious steamed fish…

You will need:

100g white fish of your choice
1 cup spinach
1 red chilli or chilli flakes
1cm piece ginger, peeled and cut into matchsticks
1⁄2 diced onion
1⁄4 cup fresh coriander leaves
1 tbsp soy sauce

Directions:

Half fill a wok with water and bring to the boil

Place a heat proof dish inside a large bamboo steamer.

Place the fish piece in the dish and scatter the ginger,
chilli, onion and half the coriander leaves over the fish.

Combine the soy and 1 tbsp water and spoon
over the fish.

Reduce the boiling water to a simmer. Place the
bamboo steamer in the wok (make sure water doesn’t
touch the base of the steamer).

Cook the fish for 8-10 minutes or until fish seperate
with a fork.

Meanwhile in a non-stick frying pan, throw in the
spinach leaves with 1 tbsp water, ginger and a pinch of
salt. Let them cook and wilt down. A teaspoon of soy
could be added here also.

Place the cooked spinach on a plate and add the
steamed fish. Drizzle with some of the sauce and add
the remaining coriander leaves on top.
