You will need:
100g white fish of your choice
1 cup spinach
1 red chilli or chilli flakes
1cm piece ginger, peeled and cut into matchsticks
1⁄2 diced onion
1⁄4 cup fresh coriander leaves
1 tbsp soy sauce
Half fill a wok with water and bring to the boil
Place a heat proof dish inside a large bamboo steamer.
Place the fish piece in the dish and scatter the ginger,
chilli, onion and half the coriander leaves over the fish.
Combine the soy and 1 tbsp water and spoon
over the fish.
Reduce the boiling water to a simmer. Place the
bamboo steamer in the wok (make sure water doesn’t
touch the base of the steamer).
Cook the fish for 8-10 minutes or until fish seperate
with a fork.
Meanwhile in a non-stick frying pan, throw in the
spinach leaves with 1 tbsp water, ginger and a pinch of
salt. Let them cook and wilt down. A teaspoon of soy
could be added here also.
Place the cooked spinach on a plate and add the
steamed fish. Drizzle with some of the sauce and add
the remaining coriander leaves on top.
