SUPER EASY VEGETABLE STIRFRY & CAULIFLOWER RICE

This Vegetable and Cauliflower Stir Fry is a great recipe to go to for a quick and easy dinner.

Follow the recipe, but feel free to add any additional spare vegetables you have in your fridge. It only takes about 15 minutes to prepare, and is highly nutritious. It’s quick, tasty and super easy to prepare.

INGREDIENTS:

1 onion, finely chopped

1 garlic clove, finely chopped or crushed

1 bunch of asparagus – or 6-8 sprigs, cut into 3cm length pieces

1 handful of chopped red cabbage

Protein – of your choice, 2 eggs (made into omelette), 100g chicken (cut into 2cm pieces), or 100g of lean beef, sliced thinly

 

Cauliflower rice:

1/2 cauliflower, grated

METHOD:

Add onion to pan, add a dash of oil, or a dash of water if on the detox and weight loss stage of the program. Sautee for 3-4 minutes until golden. Add garlic. Add asparagus then red cabbage. Add protein of your choice.  Add either chopped chicken, or beef and cook until browned.

Omelette:
If using eggs prepare an omelette, simply whisk two eggs in a separate bowl. Add to a separate non-stick pan. Move eggs around the pan to cook evenly. Once cooked, chop in 2-3 cm pieces, and add to vegetables.

Cauliflower rice:
Simply grate one cauliflower, or add to food processer and process until in grain or rice sized pieces (take care not to over-process cauliflower). Add to pan and sautee for around 5 minutes.

Once vegetables are just cooked, still slightly crunchy, and protein is cooked through, serve with a side of cauliflower rice. Enjoy!
